cluster thinning at the beginning of August. The picking is all done by hand and the grapes are gathered in small cases. The grape-clusters are carefully selected.
Vinification:
light destemming, 10-12 day maceration in temperature controlled steel vats. Restrained acidity, daily punching down and delestage (rack and return). Malolactic fermentation in barriques. Ripening:
18 months in French barriques and tonneaux. Light decantation every 4-5 months.
Bottle ageing:
At least 10 months before sale.
Color: Deep ruby-red.
Nose: generous, spicy and persistent with touches of vanilla, blackberry with light notes of green pepper.
Palate: full-mouthed, warm and harmonious. Rich, powerful structure. Elegant tannins. Long lingering aftertaste.
