Tipe of wine: red dry wine.
Description: dark brilliant ruby red with a tendency to garnet with age. . On the nose, it displays perfumes of ripe fruits,
such as plums, blackbarries, redcurants and at the end balsamic hints and spices. On the palate, it echoes the sensation
offered on the nose structured, extremely persistent, full and elegance.
Serving suggestions: excellent with aged cheese and dishes with intense flavour like braised meats and wild game.
Area of origin: from vineyards of Monte Dall’Ora in the Heart of Valpolicella classica zone, which enjois excellent
exposure to sunlight and has a limestone soil of Eocene origin. The wineyards is 50 years old , there are present also green
tutor like The Stropa, in tipical Veneto’s language, is a twig of wicker’s tree. In the past there are using to use his long and
flexible branch to bind the vines.
Grape Varieties: 50% Corvina, 20% Corvinone, 20% Rondinella, 10% Molinara Croatina e Oseleta.
Harvest: The grapes are selected only from vineyards 50/70 years old. The harvest begin at first week of October ,
selecting just the finest bunches in crates and placing these in well-ventilated rooms during 5 months, without recall to any
technological drying aids.
Vinification and ageing: Vinification takes place in the month of February following the vintage, with maceration e
fermentation in tonneaux of slavonian oak for 25/30days. Pumping over and punching down the cap are carried out
manually. Maturation is in french oak of Transeaux tonneaux of 5 hl for 4 years and subsequently in bottle for 12 months.
Analytical data: Alcohol 16% vol. - Total acidity 5,90 g/l - PH 3.65 - Dry extract 40,60 g/l – Total sulphurous 35mg/l.
Bottling: December 2009.
